Dried beef without preservatives

Tested over many years, the proprietary recipe allows the full potential of each piece of meat to be extracted. The leanest cuts of beef are carefully selected, sliced thinly, and then trimmed so that the best pieces of meat go into the next stages of production. The prepared meat is then placed in a marinade consisting of a mixture of spices, which gives the final product depth of flavor.

The meat is left to soak in the marinade for 24 hours, then spread out on stainless steel sieves and dried using alder and beech wood smoke. During this stage, the meat loses about 70% of its volume under the supervision of a qualified smoker. To maintain a constant level of moisture, the meat is placed in a specially designed chamber where it loses the remaining water (at this stage, the water content is reduced to the final 15%). Thanks to this sophisticated production process, the beef acquires a taste and aroma that will satisfy even the most demanding palates.
